How to cook soup of sorrel

Ingredients

  • water - 3 l;
  • meat on the bone (pork or beef) - 400 gr;
  • potatoes - 5 pcs;
  • onion - 1 pc;
  • carrots - 1 pc;
  • vegetable oil - 3 tablespoons;
  • sorrel - 3 bunches;
  • raw chicken egg - 1 pc;
  • sour cream to add to the finished dish;
  • salt, spices to taste.

Cooking

  1. Prepare the meat broth. To do this, boil meat in the water for 1 hour.
  2. Once the broth is ready, remove the bones and remove the meat from them, putting it back into the pan.
  3. Add the diced potatoes into the broth along with the salt and spices.
  4. While it is boiling, prepare the remaining vegetables.Grate the carrots and finely chop the onion. They must be fried in a pan with butter until golden brown.
  5. Now wash the sorrel and finely chop it.
  6. Add sorrel with carrots and onions to the pan.
  7. Ready soup must be determined by the color of sorrel. It changes quickly enough. As soon as this happens, pour a beaten egg into the soup in a thin stream. Cook the soup of sorrel for another 2 minutes, stirring regularly.

Such sorrel soup is also called green borsch, despite the fact that many are accustomed to seeing beetroot in borscht. There are original recipes for soups, including sorrel and beets.

Consider the vegetarian version of the preparation of sorrel soup. Instead of cabbage in borscht, we suggest using sorrel.

How to cook soup of sorrel with beets

Ingredients

  • water - 3 l;
  • chicken on the bone - 300 g;
  • potatoes - 5 pcs;
  • beets - 2-3 pieces;
  • onion - 1 pc;
  • carrots - 1 pc;
  • vegetable oil - 4 tablespoons;
  • sorrel - 2 bunches;
  • apple cider vinegar - 1 tablespoon;
  • salt, spices to taste.

Cooking

  1. Put the chicken in the water and cook for 30 minutes.
  2. Cut the onion and grate the beetroot and carrot on a coarse grater, fry the onion and carrot first in oil for 5 minutes, and then add the beetroot and apple cider vinegar to them, fry the vegetables for another 5 minutes.
  3. Cut the potatoes into cubes, place it in chicken broth along with a fry. Salt, pepper dish. Cook the soup for about 20 minutes.
  4. Sorrel rinse and cut large enough. Add it to the pan. Boil the soup for another 2 minutes.

How to cook sorrel for the winter

Fresh sorrel dishes are seasonal. But we can add sorrel to food all year round, if we prepare it for the winter in the following way.

  1. Rinse the sorrel well and remove the stalks.
  2. Prepared sorrel leaves cut in the size that you prefer.
  3. Place the sorrel in liter jars and fill the plant with cold water.
  4. Close the lids tightly and place in a dark, cool place.
