How to cook fried pies?
Pies - one of the most favorite dishes of many Russians. There are plenty of recipes for cooking fried pies with apples, meat, liver, berries and other fillings. Even with the usual potato pies will be very tasty if the hostess knows how to cook this dish. We suggest you use the recipe for fried pies on kefir stuffed with potatoes.
Cooking fried pies on kefir
To prepare this dish, you will need:
- a glass of kefir;
- 0.5 teaspoon of soda and salt;
- tablespoon of sugar;
- 4 tbsp. vegetable oil;
- 0.5 kg of potatoes;
- vegetable and butter;
- onions and salt.
In order to prepare the dough for fried pies, you need to mix kefir with soda, salt, sugar and vegetable oil - the result should be a homogeneous mass. Then add flour in small portions. Flour should be just enough to dough was not sticky and soft, and at the same time, not hard. Leave the dough for about half an hour - during this time prepare the filling.
To make the filling, you need to take pre-boiled potatoes (it should be hot), beat it with oil to an airy consistency, add the onion pre-fried to golden brown. Before you cook the pies on kefir, take a board and sprinkle it with flour. Now we should proceed to the formation of small dough balls, which we roll out on the prepared board.
Take each obtained cake, put a filling on its middle, pinch its edges. Your pies should turn out flat in shape - so they will be better roasted. Before you put the patties on the pan with hot vegetable oil, let them "rest" on the board for 10 minutes. If you want to make fried pies with a sweet filling, but according to the same recipe of the dough, then we recommend to take 0.5 kg of apples, about 6 tablespoons of sugar, butter and a teaspoon of rum for the filling. Prepare the filling as follows:
- Wash the apples and cut them into slices.
- Add rum and sugar.
- Melt the butter in a skillet, put the apples and extinguish them a little. Add a bit of cinnamon to the stewed apples - it diversifies the taste of the pies.
Yeast Dough Preparation
The recipe for fried yeast dough pies is as simple as the previous recipe. The most important thing is to cook the dough correctly. For it, it is imperative to enrich flour with oxygen, that is, sift. 250 ml of milk will require 2 cups of flour, a teaspoon of salt and yeast, a spoonful of sugar and 50 ml of vegetable oil (can be replaced with butter or margarine).
To make the dough, mix yeast and sugar in medium capacity, add 50 ml of milk (liquid temperature is about 40 degrees but not higher, otherwise the dough will not work). Leave the dough for half an hour - during this time its volume will increase by 3 times. Now add the remaining milk (200 ml), salt and vegetable oil. Mix everything thoroughly. Flour in the mixture must be added gradually, constantly kneading the dough. Before you cook the patties fried in a pan, you need to achieve a consistency of dough so that it does not stick to your hands.
