How to cook cheese?

Soft salted cheese, known as cheese, is usually made from sheep or goat milk. But in the market and even in the store you can meet cow's milk. Cheese is made like any other cheese with the help of a special starter and rennet.

We will tell you how to make cheese at home using regular vinegar or sour cream.

Milk and Vinegar Cheese

Ingredients:

  • milk - 3 l;
  • Table vinegar (9%) - 3 tbsp. l .;
  • salt - 1 tbsp. l

Cooking:

To make cheese you need to take homemade milk. The fatter milk you take, the more the cheese will turn out and the tastier it will be.

  1. Pour the milk into the pan and let it boil.
  2. Meanwhile, pour vinegar into a cup and pour salt in a spoon.
  3. In boiling milk pour vinegar and pour salt.
  4. Stir boiling milk for a couple of minutes, waiting for it to curl.
  5. Make a colander with gauze and pour milk into it.
  6. When the serum is drained, wrap the remaining mass in gauze and put pressure on it.
  7. When the cheese is cool, put it in the fridge.

Cheese on milk and sour cream

Ingredients:

  • 2 liters of fresh milk;
  • 400 g fat sour cream;
  • 6 raw eggs;
  • 3 tbsp. l salt.

Cooking:

  1. Milk is poured into the pan and set on fire.
  2. While the milk boils, mix the sour cream with the eggs and beat a little with a whisk or mixer.
  3. When the milk boils, pour the sour-egg mixture into it and add salt.
  4. On the smallest fire with constant stirring, cook the cheese for 5 minutes.
  5. Now we merge everything into a colander laid with gauze and leave to drain for 2-3 hours.
  6. Wrapped mass is wrapped in gauze and tightly tied.
  7. Put oppression on top and leave for the night.
  8. Ready cheese stored in brine in the refrigerator.

Any cheese, including home-made cheese, should preferably be kept in a brine so that it does not dry out. Therefore, do not pour out the whey remaining after cooking the cheese, but use it to store this delicious soft cheese.
