A method of canning whole apricots
This compote of apricots differs from others in its special appearance. After all, whole round fruits look like “sun in a can”, and the clear syrup has an amazing light yellow amber color. This method of canning preserves the natural form of the fruit, which allows later in the winter to make a delicious dessert from the dish. Due to the absence of sugar in the compote composition and the sparing effect on the products (there is no direct repeated boiling water), the taste of whole apricots resembles fresh fruit. Heat treatment consists only in the obligatory sterilization of prepared cans. To prepare such a compote of apricots, you need to take only whole, not damaged fruits with a solid dense texture. In no case will overfished or, conversely, unripe fruit suit.Wash them thoroughly and place them in sterile jars (optionally “by the hanger”) intact, without taking out the stones, but pricked them with a fork in several places. Then the fruits are poured over the prepared marinade on the basis of one teaspoon of citric acid per three liters of cold water. It is not necessary to heat the solution. Just pour into each jar as much as you need, without pouring 1-2 centimeters to the brim. The containers prepared in this way (it is more rational to use liter ones), covered (but not twisted) with lids, are placed in a large pan, on top of a piece of cloth located at the bottom. For sterilization it is best to pick up a low and wide dish so that all the cans stand evenly. After that, cold water is poured into the space between the banks. The level should be - "on the shoulders." Put on the fire, after boiling reduce it to a minimum and sterilize depending on the volume: 1.5 l - half an hour, 1 l - twenty minutes, 0.7 l - fifteen minutes. After the time you need to quickly get the banks, roll up and wrap, turning.
It is especially pleasant to drink a refreshing fruit drink on hot days - a compote of apricots with sugar. Adhering to the proposed ratio of products, you can easily cook as much as you need.For 3 liters of water, take 0.5 kg apricot and 1.5 cups of sugar. Pour the chopped fruit and sugar into boiling water and let it boil for 10 minutes. Cool and store in the refrigerator. Well, very refreshing!
Winter harvesting "Compote of apricots"
The usual method of preparing winter harvesting is to pour boiling water in fruit jars in several stages. In sterilized three-liter containers put half a kilogram of washed apricots, divided into halves. Then carefully pour the can to the brim with boiling water. Through a special cover with holes immediately drain the water to re-boil. Repeat the filling with hot water again, cover with the lids and leave on the table for 30 minutes. Then, drain the solution, add sugar at the rate of 250 grams per three-liter jar. After boiling the sugar syrup, it is poured for the third time in glass containers to the brim, immediately rolled, turned over and covered until it cools.
